Guidelines and objectives
Gusto Balsamico is an idea developed by Slow Food Italia and is part of a larger project to promote Modena’s local territory and economy.
The event, an international showcase of vinegars and pickles from around the world, is unique as an exhibition and will be a driving force and benchmark for everyone working in food and wine who aim for the best in quality standards, matched by their respect for the environment and promotion of their traditions and cultural identity.
Gusto Balsamico intends to achieve the following objectives:
• extend awareness and protect the unique nature of Modena’s traditional balsamic vinegar;
• promote quality balsamic vinegar from Modena;
• offer an overview of the incredible diversity of vinegars from across the globe;
• promote quality pickled products;
• showcase the excellent food products from the Modena area in their original location;
• teach visitors about the uses of vinegar and offer information on products to create awareness among consumers – the first step in improving the quality of both production and consumption;
• create responsible consumers for tomorrow through a comprehensive educational program for children, students and the general public;
• launch campaigns to motivate producers and increase awareness of important issues among consumers: unequivocal traceability for traditional balsamic vinegar from Modena, a set of guidelines for an informed purchase of balsamic vinegar from Modena.
Gusto Balsamico is open to the public and is dedicated to the promotion of Modena food culture and the region’s culinary excellence. It is an event combining tradition – the mother of knowledge and innovation – creativity and information to bring producers and consumers together.
